Caramelised Mint Cod
- 2 Cod Fillets
- 1 Jinadu's Caramelised Mint marinade
- Olive oil
- Fresh mint to garnish
- Lightly coat a non-stick frying pan with olive oil and placeover a medium high heat.
- Season the cod fillets with salt and brush with liberal amounts of Caramelised Mint marinade.
- Once the pan is hot,place the cod in skin side down and cook for 2-3 minutes until the skin is golden and crisp. Turn the fillet over and cook for a further 2-3 minutesor until the flesh becomes opaque.
- Garnish with chopped mint leaves.Serves 2 people.
